Sunday Morning Eggs

Sunday is the only day I have to enjoy my home and my kitchen and Sunday Morning Eggs are a favorite to make. Having a nice quiet morning to enjoy some home cooked food with a cup of coffee or tea makes the day even more special. This is one of our favorite things to make when we can enjoy our time together. Enjoy this recipe with your love or loved ones.

Yields: 6 serving or 3 very large servings


Sunday Morning Eggs served up for breakfast

Sunday Morning Eggs Ingredients
Non-stick cooking spray or butter for greasing muffin pan
12 Farm Fresh Organic Brown Eggs
1 /2 of a Red Pepper, diced
1/2 of a Red Onion, diced
Grey Salt and Fresh cracked Pepper, to your liking
Italian Cheese Blend, or a cheese you like (feta would be nice with olives added to your recipe)
12 Organic Cherry Tomatoes, cut in half (Love SunGolds)
2 tablespoons Fresh Organic Basil (or parsley and thyme, or cilantro and parsley or chervil or tarragon)
Sage flowers, or any edible flower of your liking (thyme, basil, nasturtiums, chives, garlic chives

Preheat oven to 350 degrees
Lightly oil or butter your muffin pan wells. I use a non-stick muffin pan that is 4 inches in diameter at the top x 3/4 inch (bottom) and is 3/4 inches deep, 6-Well. This measurement is for the individual cavity. You can use what you have just add only one egg per well if using a pan that has smaller wells.

My husband and I enjoy our vegetables with a slight crunch so I don’t sauté the onions or red peppers in this recipe however; if you like your vegetables on the softer side then sauté before putting them into your muffin pan.

To your muffin pan, evenly add your red pepper and red onion (or vegetables of your choice) to each individual well. (If using hash browns add those before you add your vegetables).

Crack 2 Farm Fresh organic eggs into each well, salt and pepper. Take a fork and slightly beat everything together (or leave your yolks unbroken).

Bake for 10 to 15 minute or until the whites are puffy (but the yolks are still bright yellow and a bit runny). Take them out of the oven and sprinkle with cheese and bake them until they are to your liking (5- 10 more minutes).

Take them out of the oven and top them with your fresh tomatoes, basil (or your choice of herbs) and sage flowers.
