Rose Petal Chocolate Geranium Honey is a must to make. This is such a delicious change from your standard, ordinary kind of honey. Rose petals and chocolate geranium leaves not only change but adds color, flavor and fragrance to the already richness of the honey. This honey is easy to make and lasts indefinitely. This is excellent added to sweeten your hot or cold tea, punch, add to salad dressings, jellies, frosting. This honey is nice drizzled over scones or ice cream.
When making your honey there are no hard and fast rules. Choose locally produced organic honey as that is the best. Choose a small sterilized container with a tight lid. Add a good handful of rose petals that are clean and free of all little critters. I picked enough chocolate geranium leaves to line the edge of my jar. When in the jar it is good to slightly bruise the petals and leaves with a modeler or a wooden spoon. Slightly warm your honey and pour over it over your roses and chocolate geranium leaves. (High heat will damage your honey so be careful when warming).
Seal tightly; clean the jar of any honey that might have gotten on it. Label and date your jar. Store your Rose chocolate geranium honey at room temperature for about 1 week to allow flavors to blend. Then rewarm the honey on very low heat and stain the rose petals and chocolate geranium leaves.
Pour into another sterilized jar for storage and future use. Savor the flavor whenever used or keep hidden so no one gets any.
